Creamy Carrot Cookies
The most delicious healthier carrot cake cookies! By @hen.fit.law 🙏
What do you need?
-50 grams of butter
-100 gram SweetLife Xylitol (sugar substitute - @sweetlifenatural )
-100 grams of oatmeal
-125 grams carrot
- a pinch of cinnamon
-40 grams grated coconut
-50 grams of protein powder natural
-50 grams of oat flour
-1 Tsp baking powder
- 75 grams of ricotta
- Grated lemon zest
- SweetLife St. John’s Bread (Carob) Syrup (honey replacement)
Preheat the oven to 180 degrees. Finely grate the carrot. Make sure the butter is at room temperature. Mix all the ingredients for the cookies into a thick batter.
Make 20 cookies on a baking sheet. Make sure the circles are all the same size. Bake the cookies for about 25 minutes at 180 degrees. Let the cookies cool on a wire rack. Then mix the ricotta with lemon zest and Syrup. Spread 10 cookies with the ricotta mixture and cover with the other 10 cookies! ENJOY 😍
